Time for some wholesome, plant-based comfort! Today we will be making Hot & Sour Soup. In this quick recipe we will be combining some freshly cut veggies and select spices to create a comforting soup that may be just what you need during these chilly days. Subscribe: /marlondoll
Ingredients:
3-4 Cups Diced Mushrooms (Brown/Shiitake)
1 Whole Leek Chopped
1-2 Cups Tofu Chopped
1 Tbsp Ginger Minced
1 Can Bamboo Shoots
1-2 Tbsp Chili Paste
3 Tbsp Soy Sauce
8 Cups Vegetable Stock
6 Tbsp Rice Vinegar
1 Tbsp Sesame Oil (Garnish to taste)
Hot & Sour Soup:
Prepare vegetables. Set large pot to med-high and add chopped tofu.
Brown tofu and add mushrooms, let it cook down and mince ginger.
Once mushrooms+tofu begin to stick add in vegetable stock and add ginger.
Bring that to a boil and add chili paste, rice vinegar, and soy sauce.
Stir and bring back to boil and add in the leek and bamboo shoots.
Tastes test for sour & spice balance. Add in spice as necessary.
Bring to a final boil then reduce heat and let simmer before serving.
