Panki is a traditional Gujarati recipe which is prepared using banana leaves. A batter consisting of rice flour and spices is spread between two banana leaves and is then cooked on a tawa. This is a very healthy and light food to have. The recipe is very simple and easy to prepare.
The Ingredients Are:

1 Cup Rice Flour
1/4 tsp Turmeric Powder
Salt to Taste
1 Tsp Chilli Paste
1 Tsp Ginger
2 Tbsp Fresh Coriander(Dhaniya)
2 Tbsp Chopped Methi
2 Tbsp Curd
1 Tbsp Oil
Salt to Taste
Water as Required
Garlic Butter (Optional)
Cheese (Optional)

For Masala:
1 Tsp Red chilli powder
1 Tsp Roasted jeera powder
1 Tsp Black salt.

"Panki" made on banana leaf or any leaf which is bigger in size. This traditional recipe is very healthy and can be enjoyed anytime of the day. Many people uses sorghum flour, besan along with rice flour also in panki batter but using only rice flour makes it more soft.
If you didn't get Banana leaf you can use any other big leaf or aluminium foil also works best.
Traditional recipe never call for cheese for I am adding cheese and butter so even kids can enjoy this traditional dish.
