INGREDIENTS:
1 cup Quick Cooking Oats
2 Cups Ground Rolled Oats (or Oat Flour)
1 teaspoon Pink Salt
2 teaspoons Cinnamon
2 teaspoons Vanilla Extract
¼ cup Coconut Oil
3 Large Eggs
½ cup Coconut Sugar (or granulated sweetener of choice)
1 teaspoon Baking Powder
1 teaspoon Baking Soda
½ teaspoon Black Pepper
GLAZE:
¼ cup Confectioners Sugar
1-2 tablespoon Filtered Water
½ teaspoon Vanilla Extract
INSTRUCTIONS:
1. Preheat oven to 375 F. In a large mixing bowl, combine all dry ingredients. In another bowl, combine eggs, melted coconut oil, vanilla, coconut sugar and mix well. Add wet into dry ingredients. Using a cookie scoop place small rounds onto a lined baking sheet. Flatten cookies with a fork. Bake for 16-22 minutes.
2. Allow cookies to cool for 5 minutes on the pan. Transfer to a wire rack to cool completely. Mix glaze ingredients (adding liquid slowly), to desired consistency. Drizzle over cookies. Enjoy!
