ઉબાડિયું, માટી-સ્મોકી ફ્લેવર સાથેનું , Homemade Ubadiyu Recipe Today's recipe is a trial which I made for making Valsad Famous UBADIYU at home, but with exactly same style and method with same ingredients. Surprisingly,I got Ubadiyu with exactly similar taste and earthen smoky flavour. I succeeded. I recommend this method for making Ubadiyu at home. During this pandamic our travel is restricted so, if we do not wish to travel to Valsad specially, this method is worth by which you can make the best Ubadiyu. 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 & 𝗠𝗲𝘁𝗵𝗼𝗱: 7-8 small size potatoes 150 grams ratalu (yam) 400 grams sweet potatoes Do not peel of any of these vegetables except ratalu, we will cook it as it is. Peel off ratalu. Cuts in potatoes, ratalu and sweet potatoes. Make 3/4th cut in each to stuff green masala. ==== 𝗙𝗼𝗿 𝗚𝗿𝗲𝗲𝗻 𝗠𝗮𝘀𝗮𝗹𝗮: 250 grams surti papdi 100 grams green tuvar beans 25 grams peanuts Crush peanuts in mixer. Keep it coarse 25 grams white sesame seeds 3 tbsp dry coriander seeds 2 tbsp ajwain seeds 2 tbsp saunf Crush coriander seeds, ajwain seeds and saunf in mixer, Keep it coarse. Mix it with crushed peanuts in a bowl. ==== 𝗙𝗼𝗿 𝗦𝗽𝗶𝗰𝘆 𝗚𝗿𝗲𝗲𝗻 𝗣𝗮𝘀𝘁𝗲: 50 grams green coriander leaves 5-6 spicy green chillies One small piece of ginger 8-9 cloves of garlic Half a lemon juice Crush all greens in mixer. Make green paste. ==== Add this green paste in crushed dry masalas of peanuts, coriander seeds, ajwain seeds, saunf. Add 10-11 tbsp of peanut oil. More oil is recommended. Mix everything well. One tbsp coriander powder Half tbsp turmeric powder Add both spices and mix well. Rest this mix for as long as possible more than half an hour to marinate. ==== After resting masala, stuff it in cuts made in potatoes, ratalu and sweet potatoes. Coat well surti papdi with spicy green masala. Use remaining green masala to coat stuffed potatoes, ratalu and sweet potatoes. ==== Now, in an earthen pot (clay pot) apply peanut oil on inside surface. Now spread surti papdi with green masala at bottom. Make a layer. Above it, spread stuffed potatoes, sweet potatoes and ratalu. Again make a layer of surti papdi and everything mixed. Now cover it with clay dish (Tavdi). Seal it with wheat dough as shown in video. When sealed properly, to cook the Ubadiyu put a mesh on gas stove. Put a tall round metal sleeve on mesh. Above it arrange sealed clay pot. Now turn on gas flame. Keep it high for first five minute before turning it to low. Let it cook at low flame for approximately an hour. After an hour, turn the flame off. Let it cool for 5 minutes. You can see that, wheat dough is now dried off and it breaks easily. Break it completely. Open the clay cover. Now, for smoky flavor, heat a piece of coal at high flame till it is red. Put this red hot coal piece on any vegetable leave above Ubadiyu in clay pot. Add some ghee over it.
