Vegetable White Kurma recipe cooking video. It's south Indian vegetable gravy in which vegetables are cooked in coconut based white masala for a flavourful dish that goes well with chapathi, puri, idli or dosa.
Ingredients
Oil - 2 tbsp
Chopped onion - 1 nos
Chopped tomato - 1 small size nos
Green peas - 10 nos
Ginger garlic paste - 1/2 tsp
Mixed Vegetables (chopped carrot, beans, potato)- 1.5 Cup
Coconut - ½ cup grated
Cashew - 10 nos
Cinnamon - 1
Cardamom - 2
Cloves - 2
Green chilli - 3 nos or as per taste
Curry leaves - 5
Coriander
Anise seeds - very small amount
Salt
Process:
- firstly, in a small blender take coconut, cashews, chilli, cinnamon, cardamom, cloves and anise seeds. Blend to smooth paste adding ¼ cup water. keep aside.
- Heat oil in a kadai.
- Add onion, tomato, and ginger paste until it softens.
- Further add mixed vegetabless add salt and saute for 3 minutes.
- Now add ¼ cup water, cover and cook for 5 minutes.
- And add the Chopped tomato and curry leaves give a mix, fry till the tomatoes are well cooked and oil separates.
- Now add coconut paste. Add in a cup of water to the mixie jar and add back the water to the pan, also add tamarind water, simmer for couple of minutes.
- Once the vegetables are almost cooked add in the prepared white masala paste, saute for 2 minutes until the raw flavours disappear.
- And add in 1 cup water and mix adjusting consistency as required.
- Cover and boil for 5 minutes making sure the flavours are well absorbed.
- Finally add coriander, Curry leaves and mix well.
