Pimientos de Padrón are small, bright green peppers that come from the municipality of Padrón in Galicia, in the northwest part of Spain. People usually enjoy this traditional dish with a glass of wine, potatoes, bread or tortilla de patatas. Since this is a “tapa” you can serve this with almost anything or you can eat them the way it is. These peppers have a mild bitter note to it but every once in a while you’ll bite into one that’s surprisingly spicy and that’s the fun of eating these amazing peppers. Wash the peppers and pat them dry since it may contain dirt and impurities . Add some virgin olive oil into a smoking hot pan and add the peppers . The peppers should crackle and start to blister right away . If that doesn’t happen then your pan is not hot enough . fry for few minutes tossing occasionally, until the skin starts to blister and soften . Remove from the heat and sprinkle some sea slat flakes on top . Serve them with a glass of red wine and freshly made Spanish omelette
