For preparing this toothsome pulao, long grain Rice or pulao rice is cooked along with flavourful mutton stock and is infused with spices.  Gosht Yakhni Pulao is sure to pacify your palate with fine flavours and textur. Ingredients: For yakhni: Mutton-1/2 kg Onion 1ns Garlic 1 ns Ginger 2 inch Green chilli 4 ns Salt 1 tsp 4-5 cloves 1 black cardamon 2 inch cinnamon stick 3 green cardamom 1 1/2 tbsp fennel seeds 1 1/2 tbsp coriander seeds 10-12 black pepper corn Water 1/2 litre For rice: 1/2 kg rice( basmati or golden) 2 onion fine chopped 150 g ghee 150 g yogurt Black cumin seeds 1 tbsp White cumin seeds 1 tbsp 1 black cardamon 3 green cardamom 2 inch cinnamon stick 4_5 cloves 10-15 black pepper corn 2 tbsp Ginger garlic paste 4 crushed green chillies 1/4 tsp nutmeg powder 1/4 tsp mace powder Salt1 tbsp 1 tbsp kewda water method: wrap all the spices in muslin cloth and tie tightly and drop it in the cooker. in a pressure cooker transfer mutton,tied spices and whole spice( onion, ginger, garlic and green chili) with water and salt. put the lid on. place it on high heat. bring to full pressure, reduce heat, cook for 5-6 min. after 5-6 min. turn off the flame. slot the mutton pieces out of it,drain the stock and reserve it, heat a pan, add ghee, saute all hot spices until flavour release. add onion saute it until it turn golden. add 1/2 cup of water,cook for 2 min.add ginger garlic paste, and crushed green chilies, fry for 2 min. add cooked mutton fry it well with yogurt. add salt, now add yakhni, bring a boil, add soaked rice. add a little water as well if required. put the lid on. bring a boil on high heat. after one boil. simmer the flame, cook it for 7-8 min on low flame, after 7-8 min, open the lid, sprinkle nutmeg and mace powder and kewra water. put the lid on. and cook it foe 10-15 min, on very low flame, turn off the flame. serve it hot with fried onion, raita, chutney, and salad.
