Cubes of paneer, onion, tomatoes and bell peppers are marinated with spices and curd and then roasted in the tandoor to perfection. Traditionally paneer tikka is #grilled in a tandoor but you get the same amazing taste by broiling in the oven or roasting on a grill pan too! It’s a famous Indian appetizer where pieces of paneer (Indian cottages cheese) and marinated with curd and spices and then grilled until charred. Onion, bell peppers and tomatoes are also added to the marination along with paneer. one can also add any veggies or fruits of ones choice Once cooked, it’s served with coriander mint chutney, onion slices and lemon wedges. The process is pretty simple, you marinate the paneer with spices and curd let it sit for a bit so that the flavors mix well together and then arrange the paneer cubes along with onion , tomatoes and peppers in a skewer and grill. However, the taste of paneer tikka lies in its #marination of course. So to make a good paneer tikka you first need to make a very good marinade. My marinade includes lots of spices and curd, just make sure to strain it for 2-3 hours before using. You really need thick curd to marinate the paneer cubes. Yes, you can make the tikka on stove top. A grill pan will work best but if you don’t have that a simple pan or tawa will also work. Line all the paneer pieces with onion, tomatoes and peppers in a skewer and then place on the pan. Remember to spray the pan with a oil spray first. Cook from both sides until it’s golden brown in color. It would still taste good! Always remember to serve the tikka with a sprinkle of chaat masala and side of coriander mint chutney. There’s no other way to eat it! PREP TIME: 15 mins COOK TIME: 20 mins RESTING TIME:1 hr TOTAL TIME:1hr 35 mins COURSE: Appetizer CUISINE: Indian SERVINGS: 3 person INGREDIENTS ( together for paneer tikka & mint chutney) ▢4 tablespoons thick curd ▢1 tablespoon ginger-garlic paste ▢2 tablespoons mustard oil or useany oil of your choice ▢1 teaspoons coriander powder ▢1/2 teaspoon chaat masala ▢1 teaspoon kashmiri red chili powder ▢3/4 teaspoon garam masala (optional) ▢1/2 teaspoon red chili powder or adjust to taste ▢1/2 teaspoon kasuri methi crushed ▢1 teaspoon salt or to taste ▢1 lemon juice of ▢3 tablespoons chopped coriander ▢3 tablespoons chopped mint ▢2 green chillies chopped ▢1/2 inch ginger chopped ▢250 grams paneer cut into big cubes ▢1 large onion cut into 1 inch cubes ▢1 sweet corn cut into pieces as shown in the video ▢1 large tomato cut into 1 inch cubes ▢1 large bell pepper cut into 1 inch cubes, I used green you can use mix of red and green peppers onion slices, to serve lemon wedges, to serve Follow me on YouTube @Deepa's Delicacies@ https://m.youtube.com/channel/UCcyYeWyO5Gf30CPEdxX9a6w Follow me on instagram @ https://bit.ly/2MOu3JL #deepas_delicacies INSTRUCTIONS: Whisk the curd in a large bowl until smooth. Add all the ingredients for marinade to the yogurt- ginger garlic paste, mustard oil, coriander powder, chaat masala, kashmiri red chili powder, garam masala, red chili powder, kasuri methi and salt. Whisk to combine everything together. Add in juice of 1/2 lemon. Mix well. Stir in the paneer cubes, onion, tomatoes, corn pieces and bell peppers. Mix until all the paneer pieces and veggies are well coated with the marinade. Cover the bowl and refrigerate for minimum for 1 hour or up to 4 hours. After 1-2 hours, take the marinated paneer and veggies out of the refrigerator. Take a skewer and arrange paneer, onion, ,tomatoes, sweet corn and peppers on a skewer, alternating with each other. Make all skewers similarly. Meanwhile heat a grill pan and smoke some mustardoil & butter Arrange all the prepared skewers on a grill pan. Spray the tikka with a oil spray. This is important so that the veggies don't dry out. cook from all the sides for 5-6 minutes and lastly show it to the direct flame for half a minute or until paneer pieces look little charred. place it in the plate, squeeze lemon juice, sprinkle chaat masala and serve with coriander mint chutney.
