Today we’re making Filipino scrambled eggs which is a popular side dish in the Philippines. Another name we call it is Ginisang Itlog at Kamatis though people usually add other veggies to it. To make it were just cutting tomato and onions in strips, squeezing them to release juices — also called kinumos (meaning crumpled), then sautéed. Add eggs and then turn to high heat, and stir fry. Another common recipe is called sarsiado / sarciado which is when the scrambled egg is cooked with a meat (commonly fish, shrimp and eggs). Sarciado is cooked with a bit of sauce (water, vinegar and fish sauce).
